Brown Butter Oatmeal Cookies Filled With Caramel and Peanut Butter
Ingredients:
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups old-fashioned oats
- 1/2 cup caramel candies, chopped
- 1/4 cup creamy peanut butter
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a saucepan, melt the unsalted butter over medium heat
Cook until the butter turns golden brown and gives off a nutty aroma
Remove from heat and let it cool slightly
In a large bowl, combine the granulated sugar, brown sugar, and slightly cooled browned butter
Mix until well combined
Add the eggs and vanilla extract to the butter-sugar mixture
Mix thoroughly
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt
Gradually add the dry flour mixture to the wet mixture, mixing until just combined
Stir in the old-fashioned oats until evenly distributed in the dough
Fold in the chopped caramel candies
Scoop tablespoon-sized portions of dough and flatten them slightly
Place a small dollop of peanut butter in the center of half the flattened dough portions
Top with the remaining flattened dough portions and seal the edges, forming cookies with peanut butter centers
Place the filled cookies onto the prepared baking sheet, spacing them apart
Bake in the preheated oven for about 10-12 minutes or until the edges are golden brown
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
