Chicken Fajita Salad with Queso
A delightful blend of seasoned chicken, sautéed bell peppers, and onions over a bed of mixed greens, topped with creamy queso, shredded cheddar cheese, and tangy lime juice.
Ingredients:
- 1 lb chicken breast, thinly sliced
- 2 tablespoons fajita seasoning
- 2 tablespoons olive oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded cheddar cheese
- 1/4 cup queso dip
- 1/4 cup sour cream
- 1 lime, juiced
- Salt and pepper to taste
Instructions:
In a bowl, toss the chicken breast slices with fajita seasoning, salt, and pepper
Heat olive oil in a skillet over medium-high heat
Add seasoned chicken to the skillet and cook until browned and cooked through, about 5-7 minutes
Remove chicken from the skillet and set aside
In the same skillet, add sliced bell peppers and onion
Cook until softened, about 4-5 minutes
In a large salad bowl, arrange mixed greens, cherry tomatoes, cooked chicken, sauted peppers, and onions
Drizzle queso dip and sour cream over the salad
Squeeze lime juice over the top
Sprinkle shredded cheddar cheese on top of the salad
Toss gently to combine all ingredients
Serve immediately and enjoy
