Barbecue Tofu Sandwich
For lunch or dinner, this BBQ tofu sandwich is a tasty and filling vegan and gluten-free option. BBQ sauce covers crispy baked tofu slices, and a crunchy coleslaw mix goes with it. The whole thing is served on gluten-free buns.
Ingredients:
- 1 block extra firm tofu, drained and pressed
- 1/2 cup barbecue sauce vegan and gluten-free
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Salt and pepper, to taste
- 4 gluten-free sandwich buns
- 1 cup coleslaw mix
- 1 tablespoon vegan mayonnaise
- 1 teaspoon apple cider vinegar
- 1 teaspoon maple syrup
- 1/4 teaspoon celery seeds
Instructions:
Preheat the oven to 400F 200C
Slice the tofu into 1/2-inch thick slices
In a small bowl, mix together the barbecue sauce, olive oil, garlic powder, smoked paprika, salt, and pepper
Place the tofu slices on a parchment-lined baking sheet and brush both sides with the barbecue sauce mixture
Bake for 20-25 minutes, flipping halfway through, until the tofu is golden and crispy
In a separate bowl, combine the coleslaw mix, vegan mayonnaise, apple cider vinegar, maple syrup, and celery seeds
Mix well
Toast the gluten-free sandwich buns if desired
Assemble the sandwiches by placing a few slices of barbecue tofu on the bottom half of each bun, followed by a spoonful of coleslaw mixture, and then the top half of the bun
Serve immediately and enjoy
