Swig Sugar Cookies

Swig sugar cookies are soft and delicious with a slightly crispy edge, making them ideal for any occasion. These cookies are a hit with everyone and will disappear quickly

Ingredients:

  • 1 cup butter, softened
  • 3/4 cup vegetable oil
  • 1 1/4 cups granulated sugar
  • 3/4 cup powdered sugar
  • 2 tablespoons water
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 5 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt

Instructions:

Preheat your oven to 350F 175C

In a large mixing bowl, cream together the softened butter, vegetable oil, granulated sugar, powdered sugar, water, eggs, and vanilla extract until well combined

In a separate bowl, whisk together the all-purpose flour, baking soda, cream of tartar, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until the dough forms

Be careful not to overmix

Scoop out portions of dough and roll them into 1/4-inch thick circles

Place the circles on ungreased baking sheets

Use the bottom of a glass to gently flatten each cookie to about 1/2-inch thickness

Bake in the preheated oven for about 8-10 minutes, or until the edges of the cookies are lightly golden

Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely

Optional: Frost the cooled cookies with your favorite frosting or enjoy them as they are
