Pumpkin & Sweet Potato Soup
A velvety blend of pumpkin and sweet potato, spiced with cumin and cinnamon, creating a hearty and comforting soup. Perfect for cozy nights or chilly days.
Ingredients:
- 1 medium-sized pumpkin, peeled and diced
- 2 large sweet potatoes, peeled and chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup coconut milk
- Fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and minced garlic, saut until softened
Add diced pumpkin and sweet potatoes, stir well
Pour in vegetable broth, cumin, cinnamon, salt, and pepper
Bring to a boil
Reduce heat, cover, and simmer until vegetables are tender about 20 minutes
Using an immersion blender, blend the soup until smooth
Stir in coconut milk and let it simmer for an additional 5 minutes
Adjust seasoning to taste
Serve hot, garnished with fresh parsley
