Butternut Squash Salad with Candied Nuts
Ingredients:
- 1 small butternut squash, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper to taste

- 2 tablespoons sugar
- 6 cups mixed greens e

- 1/2 cup crumbled feta cheese
- 1/4 cup dried cranberries
- 1/4 cup balsamic vinaigrette dressing
Instructions:
Start by heating the oven to 400F 200C
Put the chopped butternut squash in a bowl and add the olive oil
Season with salt and pepper
Place it in a single layer on a baking sheet
Put the squash in an oven that has already been heated and roast it for 25 to 30 minutes, or until its soft and slightly caramelized
Allow it to cool a bit
Put the sugar in a small saucepan and melt it over medium-low heat
Keep stirring it until it turns into a caramel
Add the mixed nuts and mix them so that the caramel covers them all evenly
